Fagor Stainless Steel 2 qt Double BoilerThis 2-quart double boiler melts chocolate into a heavenly goo for the fudgiest brownies or heats Crème Anglaise to delicate perfection without scalding. This Spanish vendor has crafted the boiler with beautiful European design sensibilities while still creating a functional piece of cookware. The piece has two nesting pots--a lower 2-quart stockpot for water and an upper insert for chocolate or custard ingredients. Pots are made of gleaming 18/10 stainless steel with an encapsulated aluminum base for even heat distribution. Each pot also has two circular handles that are sturdily riveted to the pots' sides and that make them easy to lift. A tempered glass lid provides an overhead view of the boiler's contents so cooks can see when a zabaglione requires stirring. The lid has a built-in steam vent to expel excess moisture and is edged with a durable stainless-steel rim and topped with a steel knob.
